During this workshop we will come into contact with an Umbrian tradition: butchery. Today our chef will talk about the anatomy of the pig, the different types of cuts and he will teach us all the secrets of this culinary tradition: from the basic techniques to the processing of the meat, up to the salting and maturing of the meat , and the making of sausages . The ATV ride will give you the chance to discover an unexpected side of Umbria: you will see the nature surrounding Assisi in Mount Subasio in an ATV with a pleasant stop in the forest for an aperitif included.
